Do Giant Forests count as two Forests?

No, they still only count as one. You probably don't want to grow Giant Forests until after you have grown four regular Forests.

Does a 6-tile Forests count as two Forests?

No, that is just a Giant Forest with one extra tile.

If you connect two Forests into one Giant Forests, does you total number of Wind Forests go down?

Yes. You have merged two Forests into one. So if you used to have two, now you only have one.
